Happy Halloween everyone!!! Hope the kids all have a goolish time! Dad & I just got home!! We left Jer & Robyn's around 8:00 this morning. We went thru Jackson Hole----saw some beautiful scenery----had some delays due to construction & even took a wrong turn that took us 20 miles out of our way!! We have had a great & memorable week & are very grateful to Josh & Natalie and to Jeramy & Robyn for having us in their homes!! Thank you!! We enjoyed getting to visit & to see the great areas you both live in!! Hopefully, it will all work out (the weather co-operates!!) for everyone to make it home for Thanksgiving!! We will be having dinner around 1:00 down at the firehall!!! This should give us more room so we can all eat more!! Love to all of you!!!!!!!

Callahan's Birthday
Hi, I just wanted to let everybody know our plans for Callahan's birthday. We will be out at the cemetery at 6:30 pm on Friday, to let off balloons. I know not everyone can make it with us, but if you could take a minute wherever you are and let off some balloons in honor of our son's birthday, we would appreciate. Love this recipe!
Okay. This is what we are having for dinner today. Smells SO good. So easy! and very, very yummy and all my kids love it, which is surprising. haha. thought I would share. Hope you enjoy! I just use dried onions, grated cheese, no celery, and no fresh parsley. Kinda plain, whatever. We love it!
Cheesy Potato Soup II |
Prep Time: 20 Minutes | Ready In: 50 Minutes | |
Cook Time: 30 Minutes | Servings: 9 |
6 tablespoons unsalted butter 1 1/2 cups chopped onions 1 1/2 cups chopped celery 4 cups water 8 potatoes, peeled and cubed | 15 slices American cheese - broken into pieces 4 tablespoons all-purpose flour 2 1/3 cups milk 2 tablespoons chopped fresh parsley |
1. | Melt the butter in a large pot over medium heat. Saute the onions and celery in the butter for 5 to 10 minutes, or until tender. |
2. | Stir in the water and potatoes, bring to a boil and then simmer until the potatoes are tender. Add the cheese and stir until melted. |
3. | In a separate small bowl, combine the flour and the milk and stir well until the flour is mostly dissolved. Pour this into the soup slowly, stirring constantly, until soup has thickened, about 5 minutes. Garnish with the parsley. Enjoy! |
